Melt-in-Your-Mouth Citrus Glazed Pork Loin

Ingredients:
2.2 lbs pork loin
Six garlic cloves, crushed with salt to taste
One tablespoon rosemary
One cup of orange juice
Juice of 4 lemons
3 ⅓ oz ml beer
Oil to grease the pan
Two potatoes sliced into discs
Three tablespoons of honey or corn syrup (Karo)
Instructions:
Rub half a lemon over the pork loin, let it sit for 20 minutes, then rinse.
Mix all the seasonings and apply them to the pork loin.
Marinate in the fridge overnight.
Preheat the oven to a very low temperature.
Place the pork in a roasting pan, cover with aluminum foil, and bake for about one hour or until the juices run clear when pierced with a knife.
Drizzle the pork with honey or corn syrup, mixing it with the seasoning juices in the pan.
Add the potato slices, ensuring they are submerged in the sauce.
Continue baking until the dish is golden brown.
Serve with white rice and a green salad for a perfect meal!
