Melt-in-Your-Mouth Citrus Glazed Pork Loin

Ingredients:

  • 2.2 lbs pork loin

  • Six garlic cloves, crushed with salt to taste

  • One tablespoon rosemary

  • One cup of orange juice

  • Juice of 4 lemons

  • 3 ⅓ oz ml beer

  • Oil to grease the pan

  • Two potatoes sliced into discs

  • Three tablespoons of honey or corn syrup (Karo)


Instructions:

  • Rub half a lemon over the pork loin, let it sit for 20 minutes, then rinse.

  • Mix all the seasonings and apply them to the pork loin. 

  • Marinate in the fridge overnight.

  • Preheat the oven to a very low temperature. 

  • Place the pork in a roasting pan, cover with aluminum foil, and bake for about one hour or until the juices run clear when pierced with a knife.

  • Drizzle the pork with honey or corn syrup, mixing it with the seasoning juices in the pan.

  • Add the potato slices, ensuring they are submerged in the sauce.

  • Continue baking until the dish is golden brown.

Serve with white rice and a green salad for a perfect meal!
